I'm from Puebla, Mexico. If you have ever read Kitchen Confidential by Anthony Bourdain, you may recall him saying, "go to the finest French Restaurant in New York City, step in the kitchen and you'll see they are all from Puebla."  He's right!
I love to cook. My mother taught me most of my skills and then I refined them working in some of New York's top kitchens. What really makes Mexican food from Puebla stand out is our desire to keep the ingredients as close to whole as possible. Sure we use some heat, but it's always balanced. We often focus on sweet over heat. For example, a perfectly ripe tomato, lovingly grown, is such a rich and rewarding ingredient. It should be showcased. Puebla Grill delivers dishes from my hometown, built with recipes from my abuela.
